Waterford Distillery in Ireland have ruffled a few feathers in the comparatively short time they’ve been about. From throwing around the word ‘terroir’ to dropping the Irish E in their spelling of whisky they’ve not only made a few friends, but built up a lots of friends, fans of those doing something a bit different.
For October’s Squad, we’ll be joined by Adam Wells, official writer of words and sayer of things about Waterford. He’s bringing along a selection of whiskies to help us understand more about what the distillery is doing and to show us how a bit of breaking the mould can make great whisky.

“Waterford Distillery is on a quest to unearth the most natural flavours of single malt whisky. Inspired by the wine industry they work with over 100 growers, distilling barley from individual farms to capture the unique flavours of Ireland’s terroirs. Reviving lost heritage barley varieties, promoting organic and biodynamic agriculture and even reintroducing true Irish peat, their single malts are a celebration of the natural flavours of Irish produce.
